Marinade
1 kg ZITA strained yoghurt
½ cup lemon juice
1 tbs ginger, grated
4 tbs garlic, minced
1 tsp cayenne pepper
1 tsp turmeric powder
2 tbs sweet smoked paprika
1 tbs salt
1 tbs pepper
½ cup olive oil
Chicken
8 chicken drumsticks
1-2 small pieces of charcoal
2-3 olive drops
In a large bowl place all marinade ingredients and mix until smooth. Combine yogurt mixture with the chicken and marinate for at least 4 hours, preferably overnight.
Bake in a preheated oven 180oC for 25 minutes. Turn the chicken and brush with the rest of the marinate mixture. Bake for 20-25 minutes more. Place cooked chicken drumsticks in a large bowl with cover.
Place a piece of charcoal on fire and burn it till turns white.
Place hot charcoal in a small glass bowl in the middle of the bowl with the chicken drumsticks, sprinkle with 2-3 drops of olive oil and cover.
Let the chicken drumsticks to smoked for 10 minutes or until they are is no smoke.
