Vegetarian noodles with curry and yogurt
INGREDIENTS
1 package egg noodles
2 tbsp sesame oil
1 large onion, cut in slices
1 cup carrots, shredded
1 cup zucchini, sticks
1 cup white cabbage, shredded
1 cup red cabbage, shredded
2 tbsp curry powder
3 tbsp olive oil
300g Zita Light strained yoghurt
coliader leaves
chilli flakes (optional)
salt & pepper
 
STEP BY STEP

In a heavy saucepan boil water with a pinch of salt.

Add noodles and cook according to package instructions.

Drain under cold water.

In a wok add 2 tablespoon sesame oil and fry onions until transparent.

Add carrots, zucchini, white cabbage, red cabbage and cook for 1-2 minutes.

Add some extra sesame oil if needed.

Add noodles and mix well.

In a small bowl add curry paste and olive oil and blend well.

Mix the curry mixture with yoghurt and blend well.

Serve noodles with curry sauce and a fresh coriander leaf.

Optional, add chilli flakes for extra heat. Season according to taste.
